2-Ingredient Pumpkin Cookies Recipe
Happy day before Thanksgiving! Hopefully everyone has an easy day at work today or is working from home (like me!) Since I don’t have to worry about commuting today, I have extra time tonight to make the pumpkin cookies I’m bringing along to our Thanksgiving feast. They are ridiculously simple, but delicious, so I wanted to share the recipe in case anyone’s looking for a last minute idea!
These cookies only require 2 ingredients – and you thought my 3 ingredient pretzels were a good find :). I have to credit one of my favorite blogs, Peanut Butter Fingers, for dropping this recipe on my radar. I made it for our bible study a few weeks ago and fell in love.
Ingredients:
1 box spice cake mix
1 15 oz can pumpkin
Mix the cake mix and pumpkin together (by hand or with a mixer). It will create a thick batter.
Drop by spoonfuls onto a cookie sheet and bake at 350 for 10-12 minutes. They should be firm to the touch when they’re done.
You can eat these pumpkin cookies just like that or add icing. I always add icing (why would you not?) and use this recipe: Cream Cheese Frosting
